Sinead Fenton grows speciality herbs, flowers and leaves, including calendula, lemon verbena, rocket flowers, Mexican marigold, cornflower, violas, gladioli, snapdragons and oxalis. Throughout the season she will grow well over a hundred varieties of edible delicacies, which make their way into many of the country's most elite and respected establishments.
